This smokey chicken and rice pilaf is the perfect dish for any summer BBQ. It's super flavourful and so easy to make. The chicken marinade is loaded with aromatic spices mixed with greek yogurt for a creamy and tangy flavour. Pair this family-friendly meal with a side of BBQ veggies.
Ingredients:
Chicken Marinade
Chicken - cubed
Saffron (a pinch) - bloomed in water
1/2 cup Greek yogurt
1/4 tsp turmeric
1/2 tsp paprika
Juice 1 lemon
Salt & pepper

Rice Pilaf:
1.5 cups basmati rice
1/2 cup greek yogurt
4 tbsp barberries
Saffron (a pinch) - bloomed in water

Instructions: ​​
Precook rice with barberries
Combine the rice with greek yogurt and bloomed saffron, put aside
Melt butter in pan until well-coated. Add rice (with yogurt) - press into pan and cook over medium-low heat
Add remaining rice on top and cook for 20-30 minutes

Chicken Skewers:
Cut chicken into cubes
Mix cubed chicken into marinade then place in skewers
BBQ chicken skewers until fully cooked
