Fragrant (Slow Cooker) Chicken Curry

I love a good set & forget recipe. This recipe is so flavourful and perfect for feeding you and your family! The chicken is so tender and the veggies don’t lose their crunch.


  • 1 tbsp oil

  • 1 medium yellow onion, diced

  • 3 garlic cloves, minced

  • 3 chicken breast, cubed

  • 1 sweet potato, peeled and cubed

  • 1 pepper (green, orange or red) sliced or diced

  • 2 cups green beans, trimmed

  • 1 cup chicken broth (we love Better than Bouillon)

  • 3 tbsp curry powder

  • 2 tsp ground cumin

  • Salt to taste (optional)

  • 1 (14 oz.) can full-fat coconut milk

  • Cilantro (optional)

  • Cashews ¼ cup (optional)


  1. Prep the veggies and chicken. Add everything to the slow cooker (except for the last 3 items).

  2. Cook on low in the slow cooker for 5 hours.

  3. Add coconut milk and cook on low for 1 additional hour.

  4. Top with cilantro and cashews and serve over cauliflower rice or basmati
