These muffins are a delicious hand-held option for your baby or toddler starting with baby led weaning (BLW). They are also sugar-free and high in iron. Best of all, you probably have all the ingredients in your pantry already, yay!
Makes 12 to 14 mini muffins
Ingredients:
½ cup flour
½ cup iron fortified oat-based baby cereal
½ tsp cinnamon
1 tsp baking powder
½ tsp baking soda
1 tsp vanilla extract
2 eggs
2 overripe bananas
¼ cup canola oil (or melted coconut oil)
Instructions:
Preheat oven to 350 degrees fahrenheit and line a mini muffin cups with parchment paper liners.
Mash bananas well in a medium bowl. Add eggs, vanilla, and oil and combine well.
In a separate bowl, combine dry ingredients: flour, baby cereal, cinnamon, baking power, baking soda. Stir to combine.
Add dry ingredients to wet ingredients and stir until smooth.
Spoon batter into prepared mini muffin cups.
Bake 12-14 minutes or until golden brown and toothpick inserted comes out clean.
