These meatballs are packed with iron and also have some veggies inside. They are great to batch prep and freeze for lunches or dinners when you are in a pinch!
½ red pepper
½ cup bread crumbs
½ tsp garlic powder
1 lbs ground beef
Optional ¼ tsp salt
Preheat oven to 375F and line a baking sheet with parchment paper.
Puree (or grate/chop finely) carrots & red pepper using a food processor or magic bullet by adding 1-2 tbsp of water.
Combine veggies with all other ingredients together in a large bowl and mix well.
Roll meatballs into 1 inch balls and place on the baking sheet.
Cook meatballs for 15-17 minutes until cooked throughout.
Combine with your favourite tomato sauce and freeze in small batches.
