Kids Mini Meatballs

These meatballs are packed with iron and also have some veggies inside. They are great to batch prep and freeze for lunches or dinners when you are in a pinch!



Ingredients:

  • 2 carrots

  • ½ red pepper

  • ½ cup bread crumbs

  • ½ tsp garlic powder

  • 1 lbs ground beef

  • 1 egg

  • Optional ¼ tsp salt


Instructions:


  1. Preheat oven to 375F and line a baking sheet with parchment paper.

  2. Puree (or grate/chop finely) carrots & red pepper using a food processor or magic bullet by adding 1-2 tbsp of water.

  3. Combine veggies with all other ingredients together in a large bowl and mix well.

  4. Roll meatballs into 1 inch balls and place on the baking sheet.

  5. Cook meatballs for 15-17 minutes until cooked throughout.

  6. Combine with your favourite tomato sauce and freeze in small batches.
